1975. Lunch time at St. Helena’s Junior High in small town Calgary. Two Italians find themselves eyeing up each other’s home made lunches, and the friendship began. Calgary’s own “Mario and Luigi” became friends and in the following years, they’d bond over food, family, and football at St. Francis High. They were destined to conquer the Italian dream but they just didn’t know what that was yet…
It wasn’t until 2006 that this dream-team came together to open Pimento’s Pizzeria in Bridgeland. After years of being a staple to the community, they figured that the best way to share their culture with Calgary was to bring their food to the people. In 2011, Cosmo became involved in the original movement of Calgary’s food trucks and Aglio e Olio was born. It wasn’t too long after that Joe’s food truck, Capone’s Strada Cucina, was cruising the streets of Calgary.
The desire to show off their fusion of culinary expertise, traditions, and cumulative life experiences has brought these two together again for their “Pezzo Di Resistenza”.
